Moroccan Chicken with Preserved Lemons

Ingredients
  • 1 pound Chicken breasts
  • 2 tablespoons paprika
  • 1 teaspoon tumeric
  • 1 teaspoon ginger fresh
  • 1/2 teaspoon cumin
  • 1/2 teaspoon cinnamon
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 4 cloves garlic minced
  • 1 onion chopped
  • 1/2 cup chicken broth
  • 1/2 cup green olives
  • 2 preserved lemons chopped
  • 1/2 cup golden raisins
Instructions
  1. Preheat oven to 350 degrees. 

  2. Marinate chicken in spices for at least 1 hour.

  3. Melt butter in skillet on medium heat, then add olive oil.

  4. Saute garlic and onions until translucent and fragrant. Set aside.

  5. Turn heat to medium-high and sear chicken, about 7-10 minutes on each side.

  6. Reduce heat and add chicken broth, olives, lemons and raisins. 

  7. Bring to a boil. 

  8. Transfer to oven and bake, covered, for 25-30 minutes until chicken is fully cooked and tender.
