Mashed Cauliflower Sweet Potatoes

  • 2 large sweet potatoes
  • 2 cups cauliflower
  • 4 tablespoons butter plus more for serving
  • 1/4 cup heavy cream
  • 1/8 teaspoon nutmeg
  • Salt and pepper
  1. Preheat oven to 400 degrees. Place sweet potatoes directly on center rack and cook for 1 hour or until they are completely tender, then remove from oven and allow time to cool.
  2. Peel sweet potatoes and discard the skin. Place in a large mixing bowl. Add butter, salt, pepper nutmeg and mash together.
  3. Meanwhile, steam the cauliflower and transfer to a food processor. Combine the cauliflower with heavy cream and puree until smooth and fluffy.

  4. Place the mashed sweet potatoes and pureed cauliflower into a serving bowl. Gently swirl together but do not completely combine.
